I’ve always enjoyed cooking, but I’ve done a lot less of it over the last few years. I am trying to get back into it now and I’ve decided to add some of my favorite recipes here (mostly so I can remember them):

Crockpot Jambalaya:


  • 1 pound skinless, boneless chicken breast halves – cut into 1 inch cubes
  • 1 pound andouille sausage, sliced
  • 1 (28 ounce) can diced tomatoes with juice
  • 1 large onion, chopped
  • 1 large green bell pepper, chopped
  • 1 cup chopped celery
  • 1 cup chicken broth
  • 2 teaspoons dried oregano
  • 2 teaspoons dried parsley
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon cayenne pepper
  • 1/2 teaspoon dried thyme
  • 1 pound frozen cooked shrimp without tails
I started out with this recipe here (from allrecipies.com), but I went a bit off track when I accidentally opened a can of crushed tomatoes instead of diced tomatoes (oops). I ended up adding the crushed tomatoes anyway (more like tomato sauce). I added a can of tomatoes, though, and then 4 cups of cooked, brown rice to absorb some of the moisture.
